Mrs Fraser's Delicious Red Sauce (serves: an army)
This sauce can be used for anything, pasta sauce, pizza sauce. It's seriously just delicious. It's quite basic and amounts are very rough, you basically just play with it until it's the consistency that you're happy with. These amounts make A LOT of sauce, but you can easily freeze it and reheat it on demand. It's very convenient.

Ingredients
1 large onion, diced
3 gloves garlic
2 bottles passata
tomato paste
1/4 cup brown sugar
Pinch Italiano spice mix
Pinch salt
olive oil
Tablespoon Butter
1/4 cup red wine
Method
1. With a large saucepan on medium heat, sweat the onions in oil and butter.
2. Add crushed garlic cloves.
3. Add tomato paste, I usually add quite a lot, but it depends on how rich a sauce you want. Add sugar and stir until tomato paste and sugar have dissolved and cooked off.
4. Add wine, cook off.
5. Pour in Passata, salt and spices
6. Boil, then leave to simmer. The longer you can leave it, the richer the taste and flavour, just make sure to stir occasionally and make sure it doesn't dry out.
